I have been wanting to try Maria Emmerich's sugar free Peanut Butter Pie ever since I started Keto. Peanut butter and chocolate are my all-time favorite flavor combination. I heard so many good things about this pie. An invitation to a 4th of July party was the perfect opportunity and excuse for me to finally make it.
Besides the mascarpone cheese, I thought I had all of the ingredients in my pantry. I ran to the store to pick up some of the mascarpone, came back and began. I have a variety of different sweeteners in my pantry, including all the different kinds of Swerve. Unfortunately, I only had small amount of powdered Swerve. Not wanting to go back to the store, I decided to put some granular Swerve in my Magic Bullet and powder some myself. It worked perfectly. I may never buy powdered Swerve again....just make my own when I need it.
I baked the crust. When it came out of the oven it was soft to the touch...almost cakey. I had my doubts that it would be good for a pie. But as it cooled, it hardened and became a proper pie crust. The filling was so good on its own. I had about a half cup leftover that never made it to the pie crust...yum.
The only thing that I may change next time is the ganache on top. I might make it out of Lakanto Semi Sweet Sugar Free Chocolate Chips instead of unsweetened chocolate that I sweeten myself, mainly because I am lazy.
